Homemade pizza

For real, not much beats a homemade pizza, so here’s my go-to recipe (courtesy of Sorted) for pizza dough (obviously with homemade tomato sauce, and all the delicious toppings!). This dough recipe is veggie, vegan and dairy free. Ingredients (dough only): 320ml warm water 1 packet dried yeast (7g) 500 g strong white flour Olive oil…

Spicy peanut noodles

Oh Donal Skehan you genius, this recipe was absolute magic. SO tasty and fresh, and so so easy & quick too. Unfortunately, the only noodles I had was spaghetti, and I was too impatient to wait until I’d gotten better ‘noodles’ to make this dish with. In any case, everything still turned out delicious! I’ll leave you…

Ingredients: 1 small bag new potatoes 1 bag fresh spinach OR (same volume of potatoes) frozen spinach juice of 1-2 limes (to taste) 2-3 cloves garlic, thinly sliced drizzle good quality olive oil salt &…

Chicken & butternut squash stew

This is a great winter warmer batch cook which uses the seasonal butternut squash, and is super cheap (great for students). Adjust the amount of chilli flakes to your personal taste of spicy. To make this veggie & vegan: leave out the chicken, and use veg stock or water. Ingredients: 1 pack chicken thighs 1 butternut…

Ham & pea soup

I always forget that this soup exists, and that it’s actually one of my favourite ones. I’m not sure of the exact quantities here, as I kind of just slung everything in, but just use your cook’s intuition to guide you through! Ingredients: (Stock) 400-500g pork ribs (preferably as a rack rather than individual ones)…

Falafels

I saw this recipe x by Foodbycamilla aages ago, and made my first batch back in September, and my second batch last week. They’re absolutely delicious! Super easy and really cheap. (Perfect student food.) Here, I’ve altered the recipe a little more to my tastes (e.g. doubled the spices as I like mine pretty spiced), but thanks…

Tips for: roasting vegetables

If you want a little twist on some regular, seasoned vegetables, add a drop of red wine vinegar to your roasting tray (about a tbsp, along with your cooking oil). It gives a beautiful sweet-sharp tang to the veg and keeps them beautifully juicy and flavourful.

Girolles on baguettini

So I bought a punnet of girolles from one of the markets here down in the south of France, and they sat in the fridge for a few days with me fretting over what to do with them. Luckily, a photo of some delicious mushrooms on toast popped up on my Instagram newsfeed, and a…

Spicy chorizo-prawn appero

Here in France, this is one of our family’s favourite apperatif nibbles. I’ve adapted this a little from my mum’s ‘gambas pil pil’, but I’ve had no complaints! Great for drinks nibbles, or perhaps even as a starter. Enjoy 🙂 Ingredients: 200g cooked & drained prawns 200g spicy chorizo, sliced into rounds 1/4 bulb garlic,…

Jamie’s Chinese Ribs

I’ve done this recipe at least 3 times now, and each time I’ve tweaked the recipe a little more and they’ve turned out more and more delicious! Had to share for any other rib/bbq lovers, it’s definitely my go-to recipe if I’m making sweet, sticky ribs at home. To make this GF: leave out the…
