Garlic-lime mayo

A simple, delicious recipe to pimp up your mayo – perfect as a dip, in sandwiches, or whatever else you want to use it for 🙂

Ingredients:

  • 5 tbsp mayo
  • 1 medium clove garlic, minced finely
  • juice 1/2 lime*
  • 1-2 spring onions, finely sliced
  • small bunch coriander, leaves stripped & finely chopped (hold some back for garnish)
  • s&p to season

*top tip: microwave your lime for 20-30secs before juicing it, you get WAY more juice out of your lime (or lemon!) that way

Method:

  1. Add all ingredients to a bowl and stir! That’s your mayo, garlic, lime juice, spring onions, coriander and salt & pepper.
  2. Keep tasting as you go along, and adjust everything until things are perfectly balanced 🙂

I had mine with some sweet potato wedges and it was DELICIOUS
