Tips for: roasting vegetables

If you want a little twist on some regular, seasoned vegetables, add a drop of red wine vinegar to your roasting tray (about a tbsp, along with your cooking oil). It gives a beautiful sweet-sharp tang to the veg and keeps them beautifully juicy and flavourful.

I added my red-wine-roasted veg to some spaghetti (with an egg to make it creamy), it was delicious!
