Just a few things I’ve eaten this week (on my healthy spree) that I thought were pretty good, and might give any rice cake fiends an idea or two 🙂
1) RICE CAKES WITH SMOKY AVO-MASH
In a bowl, mash together:
- 1 small avocado
- 1 spring onion, finely sliced
- few leaves of chopped coriander
- garlic salt
- squeeze lime juice
Dress with coriander and a sprinkle of smoked paprika
2) RICE CAKES PB&J STYLE
Simply spread peanut butter (smooth would work best so the nuts don’t break the cracker) on your rice cake then top with your favourite jam (I used home-made strawberry). The rice taste from the cracker is obviously noticeable, but I personally find it very inoffensive.
3) RICE CAKES WITH STRAWBERRIES AND “CREAM”
This one’s something just a little bit special. Recently, I’ve gone dairy-free and have been brainstorming ideas to substitute dairy products with coconut milk or cream. This recipe came out of an experiment, and it was actually so (surprisingly) delicious that I had to share! Have your chopped strawberries at the ready.
To make the “cream”, mix together in a bowl:
- 1 tbsp coconut cream (or the creamy part of the milk)
- Drizzle vanilla bean paste
- Drizzle agave nectar
Spread the cream on top of your rice cake, then top with strawberries and enjoy! I sprinkled cranberry powder on top too 🙂 so delicious, definitely one to try!
